This, right here, is quality stuff. I married a discerning cookie taster, and these are the ones he likes.

  • 1 c butter, softened (2 sticks)
  • 1 c chopped nuts (optional)
  • 1 12 oz. package chocolate chips
  • 1 tsp vanilla extract
  • 2 1/4 c flour
  • 3/4 c granulated sugar
  • 1 ts baking soda
  • 1/2 tsp salt
  • 3/4 c packed light brown sugar
  • 2 eggs

Heat oven to 375F. In a large bowl, stir together flour, baking soda and salt. In large mixing bowl, beat butter, granulated sugar, brown sugar and vanilla until creamy. Add eggs; beat well. Gradually add flour mixture, beating well. Stir in chocolate chips and nuts, if desired. Drop by rounded teaspoonfuls onto ungreased cookie sheet. Bake 8-10 minutes or until lightly browned. Cool slightly; remove from cookie sheet to wire rack. Cool completely. Makes about 6 dozen cookies.

Note: I prefer chewy chocolate chip cookies, so I take mine out right at 8 minutes.

a delicious reward for surviving a tough (albeit short) work week
